Seasonal restaurant with open-door staff policy
In the coastal city of Porvoo, an hour outside Helsinki, is the small, one-star restaurant Vår. Here, Niko Lehto and his team serve classic Finnish dishes with a modern, innovative twist. The presentations are beautiful, sensual, and driven by taste. Since receiving its first star, more and more local farmers have been willing to contribute ingredients, and the quality is high for both vegetables and fish. They only serve wild fish and like to show off all the parts of the fish through the different stages in the five courses.
