Far to the east, near the border of the neighboring country, Tapio serves a set menu of Finnish ingredients. The restaurant is a celebration of the wild, the natural, and the locally sourced — resulting in fine-tuned genuine cooking. The surrounding area shapes both the menu and the experience for the guest, which feels authentic and unique. We recognize that without the methods to extend the life of ingredients — canning, drying, fermentation, and so on — it would be difficult to run a restaurant in this part of the world. But for founders Connor Laybourne and Johanna Mourujärvi, sustainability is more than just the choosing and handling of ingredients. It’s a lifestyle where the societal aspect is just as important.
