Seven kilometers outside Visby is Lilla Bjers — acclaimed and celebrated like few other farmhouse restaurants in Sweden. A variety of organic crops are grown here, many of which end up on the plates inside the simple but beautiful restaurant overlooking the fields and farmland. Food waste is reduced thanks to smart planning and the kitchen’s proximity to the crops. The chefs only pick as many vegetables as they need each day. The chickens take care of any vegetable waste that remains at the end of the day. It doesn’t get more circular than this.
