Lakeside restaurant with honest ambitions
Lago is a Mediterranean-inspired restaurant located alongside one of Copenhagen’s canals. The dishes are straightforward, featuring ingredients that are handled with care and allowed to take the main role on the plate. The wine list is dominated by natural wines from Europe that playfully pair with the dishes. “Climate change is worrying me, and it’s such a gamble,” says Pelle Vedel Drews as he talks about trying to find tomatoes during the “tomato month” of August — a difficult endeavor due to fires in southern Europe and rain in northern Europe. Communicating sustainability issues to guests, such as price increases and seasonal ingredients, is a challenge that Pelle and the team at Lago work hard to overcome.
