Preserving to prolong the seasons
As the name suggests, the team behind the one-starred Domestic in Aarhus chooses to stay close to home. This means an uncompromising approach to ingredients, which must come from local farmers and be biodynamic. Thus, the 14-course menu contains neither chocolate nor lemons, and the tea is made from wild herbs. To keep the whole thing running year-round, some ingredients are preserved after harvesting. Domestic is also good at nurturing relationships with producers, who occasionally get the opportunity to enjoy the results of their hard work with a free dinner at the restaurant.
