Sustainability was present at Domestic long before it became a catchphrase in the industry. Today, they are more restrictive when speaking about sustainability, just like many other restaurants that have worked with these matters for a long time. The main focus for Domestic is local produce and seasonality. To dig deeper into their kitchen’s development, they started the Domestic Lab in 2021, a place where they develop new techniques and flavors. They actively work to reduce their use of plastic in the kitchen and maintain this sustainable focus in the restaurant’s choice of glass, ceramics, textiles, and furniture.
