Self-sufficient role model
In principle, almost everything served at Alimentum is grown on their own organic farm in Aalborg. That self-sufficiency includes cultivating pigs, ducks, and chickens, which will eventually contribute meat to a predominantly “green” menu. What doesn’t come from the farm is hunted or picked in the forest. At Alimentum, they also make all the beverages themselves — including some of the wines. It’s no small task for the staff, who get four out of the seven days of the week off for a healthy work-life balance.
• Self-sufficiently cultivates vegetables and meat
•Produces own drinks, including wine
• Supplements the restaurant with a food lab where the ingredients in the 35-course menu are served “naked”
• Recycles everything, down to plate shards that are glued together into new plates
• Operates its own compost on its farm
