Located on a beautiful farm with buildings from the 18th century and an internationally recognized art museum with exhibitions in the nearby forest — Wanås offers a gastronomy that reflects both the place and the seasons. Relationships with local farmers and producers have grown over time, and they now have a good insight into each other’s working methods, a prerequisite for sustainable cooperation. The fish is supplied by the only fishing operation with commercial rights for nearby Ringsjön Lake, which expressly works in the best interest of preserving the lake’s ecosystem. There’s a similar approach to the relationships with employees, who are encouraged to develop their skills and included in the decision-making process. Long-term thinking is also considered in all decisions; if an ingredient is chosen, there must be a plan for how every part of it will be used.
