At this Gotenburg restaurant, the guests are taken seriously – everything revolves around sustainability, which is effortlessly communicated during the evening. The owner, Camilla Simonsson greets us when we arrive and follows us through the evening with such warm and knowledgeable service. Here, they are passionate about sourcing seasonal, wild ingredients and creating a creative, finely tuned, balanced menu accompanied by carefully selected beverages. All the produce is sourced from the Northern countries. The kitchen uses salt but no pepper. Instead, they top the food with crass and horseradish, dried, and used as pepper. The name Vilda (Wild) captures the spirit of the restaurant nicely.
