Farm restaurant with the heart in the right place
Spiseriet is an idyllic farm restaurant with a cheese shop located in southern Sweden. The restaurant is run together by four friends with around 30 employees. The focus is on New Nordic cuisine; ingredients are fresh, organic, and mostly from the plant kingdom, but there are exceptions every now and then. Meat from Swedish mountain cattle, for example, occasionally finds its way into the kitchen when farmers need to dispose of the animals responsibly. Here, the menu can adapt to the ingredients and not the other way around. What’s in season is pickled, cured, smoked, and dried for later use. And everything is always done in a circular way that has respect for nature. The result is both relaxed and stylish.
