Café Remouillage
Complex simplicity — and high gastronomic IQ
We don’t quite understand the modesty of the name; this is not a café but a personal and methodologically driven, passionate restaurant with its own gastronomic language. Jonathan Sparber himself stands in the small, spartan kitchen while welcoming guests and conversing with those of us seated at the bar. This feels more like a living room than a restaurant. The wine list is a joy to browse, with so many small producers and great wines; it is bold and yet completely natural. “I wanna serve memorable wine; highly quality, made with respect and love for nature, revealing a story,” explains Jonathan.
Summary:
• Headstrong, creative gastronomy
• Everything revolves around the ingredients — quality is more important than anything else
• Whole animals are purchased, with even the quirky and odd parts served
• Close relationships with growers and producers
