Maquis
Plant-based, intimate dining
A relatively new, small bistro with a focus on plant-based food. Here, the atmosphere is familial, with the tables close together. Through an open door, we see the two chefs in the minimal kitchen. Two starters and two main courses are served; half are vegan and half vegetarian. There is a belief in the basic flavors and quality of the ingredients — the seasoning is careful throughout the menu. Local and organic produce dominates, with some exceptions. The wine list is short and consists of organic and biodynamic wines.
Summary:
• Completely plant-based restaurant
• Hardly any food waste due to always calculating what is needed in advance
• Close relationship with growers and farmers
