Simplicity and authenticity
Köksbaren is located in the north of the bustling college town of Umeå. Its unofficial motto is “A rustic tavern for everyone,” and is clearly in action. As a guest, you not only form a connection with the staff but also with all the local farmers with whom the restaurant has developed close relationships over time. In the kitchen, there is a constant battle against waste; every part of an ingredient must be used. Leftover bread becomes animal feed, and unused frying oil is turned into eco-friendly soap. The cooking is straightforward, honest, and uncomplicated.
