Koka

Koka has a rare ability to keep up with times, listen and absorb what is happening in society – and adapt accordingly. Not too long ago, they stopped serving meat at the restaurant, and today the entire menu is offered in a vegan version, an excellent example of how the kitchen is responsive and develops over time. At Koka, beverages play a central role. For the past seven years, they have been running their own wine import, which purchases organically and biodynamically certified wines. Of course, they don’t work with bottled water, and all coffee and tea are organic. All employees at Koka have a clear and well-written policy to adhere to, which addresses everything from working hours and rules in the event of illness, such as how to relate to abuse, discrimination, and other misconduct.
