Kiln
A small hidden gem with big ambitions
Here, Thai-influenced food is cooked in flaming woks and clay pots over hot coals. On the surface, it may not seem like Kiln is a restaurant that devotes much time to growers and farmers or addressing issues of origin, sustainability, and conservation — but don’t let appearances deceive. Kiln not only cooks good food but also takes a broad approach, highlighting producers and suppliers such as Good Earth Growers, Somerset farmer Fred Price, and Flourish Produce — all of whom contribute ingredients to the small, open, busy kitchen that attracts so many curious foodies to its 58 Brewer Street location. Service is friendly and fast-paced, which is required to keep up with the kitchen running at F1 speeds.
Summary:
• Doesn’t accept reservations; walk-ins only
• Shows great respect for its producers and suppliers
• Aims to grow Thai produce in the UK
