There are few restaurants that ask relevant questions and challenge their diners. All guests are encouraged to reflect and take a stand as a form of sustainable action. A visit to Iris is an immersive experience, impossible to forget. The food and drink are in the center, of course, but the surroundings demand attention. You’re picked up in Rosendal by an electric boat and, a moment later, step onto the floating art installation Salmon Eye. There, you’re served an 18-course menu, with each dish telling its own story, often with a message connected to the innermost essence of an ingredient, as well as its origin and future.
