Co-founder Tom Pemberton was formerly Head Chef at St. John Bread and Wine, and the influence of the iconic Fergus Henderson is palpable here on Hereford Road. This is nose-to-tail cooking that doesn’t want to make too much of a fuss, which we think is both good and bad. It shows confidence and that there isn’t a need for any chest beating. But the downside is that it leaves many things unsaid; there’s so much to tell that’s potential not fully utilized. Hereford Road stands for a rustic, robust, and flavorful gastronomy — a tribute to British cuisine!
