Rasmus Kofoed’s gastronomy is characterized by a unique drive to explore and discover what nature has to offer. The most beautiful ingredients are those that grow wild and undisturbed. Here, vegetables take center stage, accompanied by fish and shellfish. Understanding the origin of ingredients is fundamental, and the staff is encouraged to try new techniques and constantly step out of their comfort zone. The staff is also given a three-day workweek to create a healthy work-life balance — something more restaurants should also adopt.
