Chabrol
Close and caring, like a family
Sisters Sophie and Marie live by three mottos: the ingredients should be of good quality, the employees well paid, and the experience affordable for guests. That last one is the most difficult when times are tough. Like many restaurants with these priorities, they invest a lot of time in building relationships with farmers and growers. The results on the plate feel creative, coming from a kitchen that enjoys experimenting with new things. The menu is vibrant; many dishes are based on leftovers that they did not want to waste. We like this place a lot; it radiates a warmth and humanity that will stay with the guests.
Summary:
• About 80 percent organic food and drink
• Serves mostly vegetables, but also seafood and meat
• Minimizes food waste — the entire product must be used!
• 50 percent of the wines come from women winemakers
• Does not serve foie gras
