Aulis
A unique gastronomic experience
Tucked down a narrow alley in Soho, Aulis is hidden by its unassuming exterior. Inside, something like a test kitchen welcomes curious diners, but only 12 at a time. The connection to the three-star restaurant L’Enclume in North West England is palpable, although the cooking here feels bolder, even more adventurous. The aesthetics, strong flavors, unexpected combinations, and playfulness with textures, temperatures, and cooking techniques are typical of Chef Simon Rogan, who reopened Aulis in the spring of 2023. There’s no boasting about ambitions at Aulis, but the origin of the ingredients, as well as the kitchen’s vision and purpose, are clear.
