Purpose, People, Planet, and Profit — these four underpin everything at Alouette, where Nick Curtin sets a high gastronomic bar. Perhaps we can add one more value: Poetry. This is technique-driven cooking, which still manages to feel genuine, down-to-earth, and witty. The influences may be global, but the ingredients are almost exclusively local. “Sustainability is a journey, not a destination,” says Nick Curtin, referring, of course, to the knowledge and experience that must be gained along the way.
