Throw nothing but soil!
A new bistro has opened among the recent buildings along the thoroughfare of Järntorgsgatan in Gothenburg. On paper, Alba seems like any other neighborhood bistro, but we soon realized that it has ambitions beyond the ordinary. “The only thing that can be thrown away is soil,” we’re told by the kitchen, which then describes the hard work it takes to eliminate food waste. This is simple, honest cooking based on producers in the Gothenburg area — although exceptions are made. The service is warm and welcoming, and the knowledge of both food and drinks is high. Alba is a welcome addition to Gothenburg’s restaurant scene.
