Restaurang Jord displays an unbridled passion for cooking, where everything from plum stones to goat kids and reindeer moss may be included in the twelve-or-so tasting menu that is kept secret until after you’ve finished your meal. Apart from contributing to the guests’ excitement, this approach allows the kitchen to be flexible, work nose-to-tail and, ultimately, keep food waste to a minimum. The work environment is top priority, for example the restaurant is closed every second Saturday, allowing the staff an extra, well-deserved day off.
