Under is shaped by the coast of Lindesnes and a deep respect for what the region provides above and below the surface. Led by chef Bernt Sætre, the kitchen works seasonally with local fishermen, farmers and foragers, preserving and fermenting ingredients to extend short and shifting seasons. Sustainability here is lived rather than stated, reflected in local materials, minimal waste and a strong care for the team. The result is a calm, immersive experience rooted in place, craft and long-term responsibility.
