Going full-circle
This delightful restaurant recently underwent a metamorphosis, from picnic-style drop-in dining on the dock, to a meticulously directed experience for an audience of twenty, based on what the local farmers have to offer for the day. Today, Hörte Brygga can proudly call themselves “a circular restaurant” where everything down to furniture and workwear is locally and sustainably sourced. Furthermore, the staff works no more than eight hours a day, with benefits rarely found in the industry. A role-model.
