The lighting, materials, tone, and atmosphere; it feels reminiscent of a trendy London hotspot—pleasantly minimalistic yet slightly stark. The cooking, while seemingly simple and spartan, is a masterclass in technical precision and thoughtful flavor and texture combinations. Of particular note is their inspired use of offal; here, dishes featuring tongue, liver, sweetbreads, and kidneys are elevated to delicious heights. It’s an experience not to be missed!
