In harmony with nature
Situated in close proximity to nature and far removed from the distractions of urban life, this restaurant enjoys advantages that city-based establishments can only aspire to. The menu is dictated entirely by the availability of ingredients sourced from the surrounding lakes, streams, fields, and forests. While staples such as salt, sugar, vinegar, rapeseed oil, and flour are brought in from outside, all other ingredients are procured locally, within a two-hour drive. The farm itself is self-sufficient, producing its own vegetables, herbs, and meat. This is a cuisine that exudes a sense of wild beauty, characterized by its elegant simplicity.

What inspired you to become self-sufficient, and what are the biggest challenges?
-Our main motivation was to create a truly sustainable and responsible food system, where we know exactly where everything comes from. We haven’t bought vegetables, herbs, flowers nor salads since June 2022. We raise our own meat here at the farm, and have wild sheep, cows, pigs, chickens, goats, and quails.
