Clear ambitions for sustainable fishing
It’s becoming increasingly difficult to find purely fish-focused restaurants, and even harder to find those that dedicate time to sustainability issues. As The Pescatarian writes on its website: “Only fish and shellfish which are caught close to land are served, and as Danish waters offer such a rich supply of delicious seafood, there will be something for everyone.” While fishing close to land doesn’t guarantee sustainability, the simple fact that they engage in dialogue with fishermen and are well-informed about fishing methods, sustainable stocks, and fishing areas gives us restaurant guests greater peace of mind.
Sustainability highlights
- Only seasonal fish from the North, with a strong dialogue with the fishmonger to ensure quality
- Use as much as possible from each product
- Employ traditional techniques to preserve ingredients
- A wine list that focuses on white wines from Europe
