Ingredients come mainly from nearby producers such as Søtofte, Bokelundgården and Fiskerikajen, chosen for how they work rather than how they present themselves. The cooking takes a playful, modern approach to smørrebrød, turning a familiar format into something creative and full of flavour. Shaped by the seasons and mutual respect within the team, Selma moves steadily toward long-term change.
