Kieran McLaughlin, Timo Mikkelsen, Tim Bank-Thomsen, and Anders Kvorning knew exactly what kind of restaurant they wanted to create, and when Pauli opened in Sydhavnen in 2022, everything felt both natural and relevant. Local ingredients are handled with the utmost skill by the chefs. Craftsmanship and creativity are evident even in the drinks, where Nørrebrew has had a hand in the offerings.
