For the love of all things Danish
Few restaurants take such pride in being a part of the Danish culinary heritage as Restaurant Domestic, and even fewer complete their mission in such an exquisite way. Everything, down to the Danish drink paring, is based on regional ingredients, and the reason is not only a strong emphasis on flavours and textures, but also a constant struggle to minimize the carbon footprint and food miles. The menus reflect the seasons, but a lot of time is spent preserving freshly harvested ingredients for the seasons to come.
Sustainability highlights
- Highlight and promote Danish wines and beverages
- All leftover food scraps are repurposed for their own compost
- Offer a short menu based on leftovers produce
- Root-to-Stem cooking, utilizing every part of the ingredient
- Recycle and repair tableware
- Eliminate single-use plastics and disposable paper products
