Lilla Bjers

Gastronomy points 2024
A second coming
Lilla Bjers has built a reputation for great, circular food in a greenhouse setting. During the past year, they have risen to an even higher level both gastronomically and sustainably. New head chef Christoffer Nord, whose resume includes work at Aquavit and Gastrologik, has considerably raised the gastronomic quality. But that isn’t the only improvement. Outside, nearly three hundred apple trees and nine-thousand asparagus plants have been planted, and the restaurant’s own cows are working towards making the kitchen self-sufficient in meat.
Sustainability highlights
- All the greens served at the restaurant are grown on their farm
- They raise their own livestock with the goal of becoming self-sufficient
- Some of the compost is used to feed their own cattle
- The tables are crafted from trees of the farm
- Provides a stimulating environment for employees and offers an educational experience by working closely with nature
- The restaurant and the garden are both KRAV-certified
