LYST’s sustainability manifest begins with the words “Protect global. Nurture local”. If we translate this to the daily work in the kitchen, it means cooking with a seasonal approach, sourcing ingredients from within a 100-mile radius and utilizing every part of each product. The plating is wonderful and minimalistic; flavours are both complex and refined. Head chef Daniel Mcburnie and his crew are allegedly aiming to supply a magical dining experience. Rest assured, they have managed to achieve this, yet another year.
