To run a fine dining restaurant that floats in the middle of a Norwegian fjord comes with extraordinary, logistic challenges. But head chef Anika Madsen has not set out on the expedition that is Iris, a fine dining restaurant floating in a giant art installation, alone. The staff shares her passion for elegantly restrained dishes based on ingredients, some of them unusual, from the surrounding waters. Furthermore, the team has strengthened its ties to local farmers. And the work has paid off – since our last visit, Iris has gained both recognition and stars from several restaurant guides, in addition to this one.
