The menu is dictated entirely by the availability of ingredients sourced from the surrounding lakes, streams, fields, and forests. While staples such as salt, sugar, vinegar, rapeseed oil, and flour are brought in from outside, all other ingredients are procured locally, within a two-hour drive. The farm itself is self-sufficient, producing its own vegetables, herbs, and meat. This is a cuisine that exudes a sense of wild beauty, characterized by its elegant simplicity.
