Something new and different
When Jacob Holmström closed the two-starred Gastrologik in Stockholm to return to his hometown of Halmstad, he had no intention of continuing with fine dining. His new restaurant, Fyr, has different qualities and is spectacular in entirely new ways. Here, ingredients are cooked over an open fire; the birchwood adds its own character to the menu, which naturally features a lot of fish and seafood. The surroundings are dramatic, with the wild sea crashing its salty waves against the roof and windows. The overall experience is warm, personal, and festive, but the focus on food and drink never wavers.
