How do you balance sustainability with high culinary standards?
– We believe that the greatest potential for lasting change lies in our fields and on our plates, rooted in the restaurant industry. Sustainability isn’t about perfection, but about initiating change in how we treat our products, engage with our suppliers, train our employees, and approach customers—fostering their curiosity and educating them holistically through all senses. By combining sustainability with gastronomy, we want to show that sustainable food can be irresistible, offering a lasting experience that leaves a mark on our guests and inspires a shift in mindset.
What does it mean for you to be part of 360°Eat Guide?
– 360°Eat Guide helps foster such a holistic approach. It is quite rare to see a guide that values sustainability in its whole as much as excellence on the gastronomic side. We are proud to be recognized with three circles in the Belgium edition for the second year in a row and thrilled to see so many restaurants in our country being awarded.
