Assessment
The assessment consists of two key parts: visits by the 360°Eat Guide jury members and in-depth conversations and interviews. Together, these elements determine whether a restaurant qualifies for inclusion in the 360°Eat Guide.
Visits by the jury
First, restaurants are visited by the 360°Eat Guide jury members for a gastronomic evaluation. Every detail is considered—from the ambiance and service to the quality of ingredients, craftsmanship, and creativity in the dishes. Taste in food and drink takes center stage, while still ensuring a comprehensive and holistic assessment.
Who are the jury members?
Pär Bergkvist, the founder and editor-in-chief of 360°Eat Guide, brings extensive experience as a journalist, editor, and publisher specializing in food, wine, travel, and lifestyle. For several years, he served on the jury for The World’s 50 Best Restaurants, gaining valuable insights into the assessment process. Supporting Pär is a dedicated team, carefully selected for their deep knowledge of the restaurant industry along with their passion for highlighting responsible gastronomy.
Each year, hundreds of chefs and restaurateurs are interviewed to gain fresh perspectives and stay informed. These industry leaders serve as both teachers and sources of inspiration. This approach ensures the evaluation process remains credible, transparent, and consistent.
Conversations and Interviews
The second part of the assessment focuses on the core of sustainability. The 360°Eat Guide evaluates a wide range of factors, including sourcing practices, supplier relationships, staff management, work-life balance, waste reduction, and energy efficiency. Through in-depth conversations and interviews, restaurants are assessed on their commitment to economic, environmental, and social responsibility.
Qualification and Inclusion
Only those restaurants that meet the standards will be featured in the 360°Eat Guide. Each qualifying establishment is categorized based on two key criteria: sustainability circles and gastronomy points. The ranking order within the curated list reflects this dual emphasis, ensuring that both sustainability and gastronomy are considered in the assessment.
Restaurants are ranked according to sustainability circles, with a higher number of circles signifying a deeper commitment to sustainability. Within each circle category, restaurants are further arranged based on their gastronomic points, recognizing culinary craftsmanship and the full experience. Read more about the ranking here.
