An ode to Estonia
What is Estonian food? Well, for one thing it’s made of prime, Estonian ingredients that have been farmed or foraged with the utmost respect for the surroundings. The Wicca version of Estonian food is nearly 100 percent local and prepared according to a zero-waste philosophy. The restaurant itself is situated in Laulasmaa, a beautiful seaside resort just outside of Tallinn, offering a set five or eight course ”flavour excursion” that include modern and well-crafted highlights from the meat- and vegetable kingdom.
