Suto
86-90
Intimate and inspiring
The duo behind Suto are Yoshikazu Suto and Carolina Alarcon, a chef and a sommelier who’d previously worked together at Disfrutar, the recent top-ranking restauarnt on the World’s 50 Best list. Suto is a small Omakase-style restaurant where all six guests spend the evening sharing the same menu of innovative Japanese dishes that are both beautiful and tasty. Complementing the menu is a thoughtfully curated selection of drinks, that impress just as much as the food. Here, there’s great authenticity and a strong passion for telling a story — in the words spoken as well as through the food and drink served.
Sustainability highlights
- Uses local and seasonal produce as much as possible
- Looks for wine from and often visits small wineries, which are also invited to the restaurant
- Ensures suppliers utilize reusable materials
- Buys napkins that are washable and tableware that’s locally handmade
