Sustainability à la carte
The Thonet chairs and marble tables are there, along with a menu sporting your obligatory boudin and steak frites. However, this distinctly French bistro has plenty of dishes, such as house terrine and fried cod cheeks, reminiscent of the days when recycling and reusing was an instinct rather than a trend. The name reflects the restaurant’s original policy to list 10 whites and 10 reds, only buying ten cases of each, replacing them with entirely new wines when they were gone. Today, however, the cellar is well-stocked but still, intriguing.
