Bringing flavours to life
Bubala, meaning “darling” in Yiddish, started as a pop-up. Since then, it’s developed into two restaurants serving middle eastern, vegetarian food with complex flavours, thanks to superb, local produce and careful cooking techniques, such as butter confiting of swedes and slow roasting of carrots. The result is vibrant and exciting – this is definitely the place to bring the handful of people who still dare to think that vegetarian equals boring.
