At Heimat, sustainability begins close to home. Chef and owner Niels van Zijl builds his cooking around seasonality, locality and a deep respect for timing and quality. Preservation plays a central role, allowing ingredients to return beyond their season, sometimes transformed into unexpected forms or drinks. Both kitchen and front of house guide guests through simple, deliberate dishes, each accompanied by the stories of the local people behind the produce.
