Elegant, understated and produce-driven
In this bright, sparsely decorated restaurant, produce plays the lead role. The cooking is straight-forward and honest, appropriately described by the Dutch founders as “modern European”. Most importantly, they are allowing each ingredient to come into its own. And regardless of whether you’re feasting on wild boar or pointed cabbage, you can do so, safe in the knowledge that the producer, hunter or fisherman is as devoted to sustainability as the kitchen itself.
Sustainability highlights
- Seeks out smaller producers
- Offers a short wine list made up largely of natural wines
- Experiments a lot with non-alcoholic drinks
- Opts for washable napkins over single-use paper ones
