In the spring of 2024, Nobelhart & Schmutzig made a slight change of direction, announcing a simpler and more rustic approach for the future. That shift, of course, was due to the state of the economy but also typical for a restaurant that’s always at the center of things, aiming to influence and be influenced by what is happening in the world around it. However, many core principles remain unchanged, such as their unwavering commitment to sourcing from suppliers with whom they share a strong emotional connection. This is a creative, intelligent, and personal gastronomy based on exceptional ingredients. Yet, the sustainability effort extends far beyond ingredients and includes a drive and a social commitment that’s far from ordinary.
