Simplicity stripped down
At Merold, there are a few things that truly amaze us: the simplicity in the cooking, where every ingredient is allowed to shine and showcase its unique character. Also, the precision of the wine pairings—rarely do we experienced such a harmonious yet dynamic interplay between food and drink. The staff is attentive, friendly, and as determined as we expect them to be.
Sustainability highlights
- The goal is to keep supply chains as short and direct as possible
- Very selective with fish and seafood choices
- Over 80 percent of produce is organic
- Always a homemade sausage made from lesser-known cuts
- The only large supplier is Terra Naturkost, an organic wholesaler focusing on products from the Berlin-Brandenburg region
