A sustainable country escape
“Food straight from the earth” is the promise from restaurant Marle, residing in a beautiful, Georgian country house, overlooking lakes and woodlands. The produce does indeed come straight from the resident, biodynamic garden, but before landing on our plate, it has been given the royal treatment in the kitchen. Through gentle cooking techniques and delicate flavours from around the globe – with the emphasis on the Mediterranean kitchen – each exquisite ingredient has been encouraged to blossom.
Sustainability highlights
- Works closely with growers, fishermen, and farmers to increase understanding of ingredients
- Makes great use of food waste in their drinks/cocktails menu
- Cooks with a large part of vegetables taken from their own garden during summer.
- Uses as much as possible of every ingredient
