Embracing the varieties of the seasons
The entrance via a small grocery store sets the scene. Once inside the dining room, there’s an open kitchen, generous light, and rustic country décor to greet you. Run by the duo Quentin Szuwarski and Benjamin Rauwel, Ivresse is a bistro where everything feels natural and spontaneous yet well thought out. The essential underlying philosophy revolves around people: ensure everyone involved is well taken care of, and all the rest will go well. From close relationships with farmers and suppliers to clear and honest dialogue with guests, that’s where it all starts.
