A sanctuary for high-quality produce
At this combined restaurant and market hall, sustainability is ever-present, not because of some fad, but because it’s the logical thing to do. Hobenköök, meaning “Harbour Kitchen” in North German dialect, has the privilege to be able to use whatever hasn’t been sold at the market during the day, and, consequently, to work in a circular manner. The food manages to be both rustic and adventurous – think pickled salmon trout with fermented asparagus and grilled lemon cream – adding to the cheerful atmosphere.
