Creativity in bloom
At the Botanic Sanctuary hotel in Antwerp, we find this tiny, culinary enclave where the food is served omakase-style and conceived using Japanese techniques. As chef Gert De Mangeleer stresses, this is not a Japanese restaurant – the team, catering to 26 guests each night, two weeks per month, stems from all over the world. The produce, however, is local and adapted to the seasons, while plated in a delicate yet truly eye-catching manner.
